Arte Bianca – The White Art of Dough


Arte Bianca or “white art” is a term flour technicians use for mixing dough.

We use a biga (Italian sourdough) in our dough making which adds fragrance, flavor and taste.



Our dough is matured in a 48-72hr process which ferments and partially

digests the dough, making it lighter and easier for your stomach to digest.
